    Amla Pickle

    Ingredients

    • 10-12 Indian gooseberries (amla)
    • 2 tablespoons mustard oil
    • 1 teaspoon mustard seeds
    • 1/2 teaspoon fenugreek seeds
    • 1/4 teaspoon turmeric powder
    • 1/2 teaspoon red chili powder (adjust to taste)
    • Salt to taste

    Instructions

    • Wash and dry the amla thoroughly. Cut them into small pieces, removing the seeds.

    • Heat mustard oil until it smokes, then allow it to cool.

    • In a separate pan, dry roast mustard seeds and fenugreek seeds until fragrant, then grind them into a fine powder.

    • Mix the ground spice powder, turmeric powder, red chili powder, and salt with the cooled mustard oil.

    • Add the amla pieces to this mixture and mix well.

    • Transfer the amla pickle to a clean, dry jar. Let it sit for a few days before using to allow the flavors to meld.
