    Turmeric Roasted Vegetables

    Ingredients

    • Assorted vegetables (e.g., carrots, cauliflower, broccoli, sweet potatoes)
    • 2 tablespoons olive oil
    • 1 teaspoon turmeric powder
    • Salt and pepper to taste

    Instructions

    • Preheat the oven to 425°F (220°C).

    • Chop the vegetables into bite-sized pieces.

    • In a large bowl, toss the vegetables with olive oil, turmeric powder, salt, and pepper until well coated.

    • Spread the vegetables evenly on a baking sheet.

    • Roast in the oven for about 20-25 minutes or until tender and golden brown.

    • Serve as a side dish or with grains for a complete meal.
