    Turmeric Chicken Curry

    Ingredients

    • 1 lb (450 g) boneless, skinless chicken breasts, cut into cubes
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 1 teaspoon turmeric powder
    • 1 teaspoon curry powder
    • 1 can (14 oz) coconut milk
    • 1 cup chicken broth
    • 2 tablespoons oil
    • Salt and pepper to taste
    • Fresh cilantro for garnish (optional)

    Instructions

    • Heat oil in a large skillet or pot over medium heat.

    • Add onion and garlic, sauté until softened.

    • Add chicken and cook until browned on all sides.

    • Sprinkle turmeric and curry powder over the chicken, stirring well.

    • Pour in coconut milk and chicken broth, season with salt and pepper.

    • Simmer on low heat for 20-25 minutes or until the chicken is cooked through and the flavors meld together.

    • Garnish with fresh cilantro and serve with rice or naan bread.
