    Turmeric Lentil Soup

    Ingredients

    • 1 cup red lentils, rinsed
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 1 carrot, diced
    • 1 celery stalk, diced
    • 1 teaspoon turmeric powder
    • 1 teaspoon cumin powder
    • 4 cups vegetable or chicken broth
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • Fresh cilantro for garnish (optional)

    Instructions

    • Heat the olive oil in a large pot over medium heat.

    • Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté for about 5 minutes until the vegetables are softened.

    • Stir in the turmeric powder and cumin powder, and cook for an additional minute to toast the spices and enhance their flavor.

    • Add the rinsed red lentils and stir to combine them with the vegetables and spices.

    • Pour in the vegetable or chicken broth and bring the mixture to a boil.

    • Once boiling, reduce the heat to low and let the soup simmer for about 20-25 minutes or until the lentils are tender and cooked through.

    • Season with salt and pepper to taste, adjusting the seasoning as desired.

    • If you prefer a smoother consistency, you can use an immersion blender to partially blend the soup, leaving some texture.

    • Ladle the soup into bowls and garnish with fresh cilantro if desired.

    • Serve the turmeric lentil soup hot and enjoy!


    This recipe makes approximately 4 servings. You can also customize the soup by adding other vegetables like spinach or diced tomatoes for added flavor and nutrition.
