    Turmeric Quinoa Salad

    Ingredients

    • 1 cup cooked quinoa
    • • 1 cucumber, diced
    • 1 bell pepper, diced
    • 1 carrot, grated
    • 1/4 cup chopped fresh parsley
    • 2 tablespoons lemon juice
    • 1 tablespoon olive oil
    • 1 teaspoon turmeric powder
    • Salt and pepper to taste.

    Instructions

    • In a large bowl, combine cooked quinoa, cucumber, bell pepper, carrot, and parsley.

    • In a separate small bowl, whisk together lemon juice, olive oil, turmeric powder, salt, and pepper.

    • Pour the dressing over the quinoa and vegetables, tossing well to coat.

    • Adjust seasoning if needed.

    • Allow the salad to sit for a few minutes to let the flavors meld together before serving.
